Low Carb/No Carb Mediterranean Steak
I adapted this from the recipe in The South Beach Diet Quick and Easy Cookbook. The recipe calls for grilled olives, artichokes, and tomatoes. I also added some eggplant I had leftover from something else and used garlic powder and dried onions since I was too lazy to use the real thing, haha.
Grill up some steaks and then use the same surface to grill up all the veggies you’d like. Throw the veggies on top of the steak and top with feta cheese. Super easy and quick.
