No Carb Breakfast Protein Rolls

Last night we got more snow here in Maryland. Keith is over the moon. Unfortunately, the mid-Atlantic region never took the class on dealing with snow removal and cold temperatures, so I knew I may not be able to get out of the house today. I meant to go grocery shopping yesterday, but Mr. Cranky Pants toddler was having a one melt-down after another, mama just hold me all day, kind of day. I also did a horrible job of limiting my carb intake yesterday and vowed to have a carb-free dinner. I spent some time trolling through Pinterest and finally combined a few recipes to make a super yummy, carb-free dinner out of the few ingredients I actually had. The result: no carb breakfast protein rolls. They were incredible.

photo 3This super duper meal was fast and easy (my two favorite dinner requirements). You could substitute for almost anything, so it’s also very versatile.

  • eggs
  • bacon
  • avocado
  • cheese
  • salt & pepper or other seasoning

Line the sides of cupcake tins with bacon. I used turkey bacon, but it really depends on your preference. Line the bottom of each tin with avocado and crack an egg into the middle of each bacon round. Top with cheese (I used cheddar since that’s what I had) and season. Bake at 400 degrees Fahrenheit until the egg is cooked to your liking (these were about 20 minutes and the yolk was still a bit soft).

photo 4-1I didn’t line the pan with anything to keep them from sticking, they just lifted right out! I am still amazed at how simple and decadent they were!
