No Carb/Low Carb Chicken Taco Salad
I’m still doing South Beach-esq meal planning and the Daniel Plan Journal has been encouraging in that! For dinner last night, I was determined to do something with the leftovers and was desperate for some mexican food, but didn’t want to eat a ton of carbs since we were eating late. I pilfered the fridge and came up with a super delicious meal with less than 5g of carbs!
I started with a handful of leftover rotisserie chicken and 1/4C of white cheddar cheese. I nuked them for about 30 seconds to get them warm and then threw a handful of mixed greens on top. We had a bowl of cut up veggies (green peppers, mushrooms, cucumbers), so I added those and chunky salsa and sour cream (light with onion soup mix in it). I usually add avocado as well, but completely forgot today!
It was such a yummy lunch for today and very filling and satisfying!
